Top chefs choose their favourite 3am snacks

When the restaurant service is finished, what are the late-night comfort foods the people who have been feeding us turn to?

Oh, don’t. I got myself in all sorts of trouble. When I started the Sportsman I was doing it on my own and I wouldn’t eat during the day. You’re tasting so you never get hungry, but then you finish work and think God, I’m really hungry. I’d get a baguette, fry up a bit of chorizo and have it with sour cream and spiced mango chutney. It was so good.

I have a really good one. It’s sashimi – the Korean word is hwe, or hoe – with uni and champagne. We use a lot of sashimi in the restaurant so there’s quite often leftovers we get to take home. Unfortunately we don’t always have champagne in the fridge.

Any late-night worker worth their salt will have a good supply of packet noodles in the cupboards. So I have two favourite brands: one's called Mama – I normally get a tom yum flavour – and the other is Nongshim Shin Ramyun. Accessorise with kimchi or meatballs. One of my chef friends keeps back a bit of KFC from the night before, then chops that up and has it with his ramen the next day.

Well, I have a Bob Ross toastie machine, so my guilty pleasure is having a toastie with amazing Irish artisan cheese while watching some reality TV programme about old couples that cruise.

Fried rice. You know the microwavable packets of plain rice? They’re the best to make fried rice with. Couple of them and whatever is in the fridge.

This is super-boring, but I’ve stopped eating at night. I find it very difficult to switch off after work. If I eat, because your body’s digesting, it’s even harder to get to sleep.

I like to fry tinned chickpeas with cumin, coriander and chilli and whatever vegetables I have lying around. All together with olive oil.

I always have cooked rice knocking around, so a quick rice dish with eggs and a vegetable and some sort of chilli condiment. That's a good late night meal.
